Mildura bakers rise to the top in Victorian show

SUNRAYSIA Bread and Butter Bakery bagged a baker’s dozen of trophies over the weekend, after competing at the Baking Association of Australia 2021 Victorian Baking Show.

The show, held in Shepparton, brought together 82 bakeries from across the state to show off their skills and compete for the title in categories such as breads, pastries and pies.

Mildura baker Kaitlin Cass scored a tied-third for her traditional pasties, an accolade she said she couldn’t be prouder of.

“I’ve worked here for about four years, but I’ve only just started doing pasties, so to be involved in that was really exciting,” she said.

“We usually don’t do too well with our pastries, so to get third was a great achievement.”

However, it was Bread and Butter Bakery colleague Hayley Kellett’s Sunraysia sourdough that stole the show, alongside apprentice baker Nathan Kingi’s roast beef pull-apart.

“Hayley puts some orange in the starter, so it gives it a bit of an orange flavour and we use the local pink salt as well,” Ms Cass said.

“Our first-year apprentice baker got second with his pull-apart, which was created just for the show, but because he did so well we’re going to start doing that here soon.”

It’s the first time the bakery has brought home more than seven awards from the show, after four years of participating.

Ms Cass said while preparation was intensive, teamwork was the bakery’s secret ingredient for success.

“It really is a team effort,” she said.

“What’s great about the show as well is that we get to catch up with other bakeries across the state and chat to them about what they do and how we can improve.”

The bakery also scored first for its three-strand plait, pipe loaf and grain block and second place for ciabatta, rye sourdough, pane di casa, gluten free loaf, sourdough and grain cob.
